Cooking a meal and having various meals to make with any leftovers is always a benefit when cooking. I think it is fantastic on a busy schedule to be able to get home and have the meat ready for your pasta, tacos or chicken salad.

Baked chicken is one of my favorite entrees to make. Baked chicken is low maintenance because just put in the oven covered.  Then a couple of hours later bam baked chicken is ready.  Baked chicken with some mashed potatoes and a green vegetable makes a delicious meal for any day. Baked chicken has many different ways it can be cooked, with butter and herbs or stuffed with jalapenos to add a kick.  I like to wrap my baked chicken in bacon and stuffed with jalapenos in the cavity. I hold the bacon on the chicken together with toothpicks then cover and slow cook at about 325 degrees so the chicken is tender.

If you have any baked chicken left over then that can be used to make pasta. Imagine you have gone from an American meal to an Italian meal the next day.  The spices are the key when using leftovers to cook with the next day. The Italian spices are the key because of the different spices you will not get tired of chicken.  Another idea for your leftover baked chicken is Chicken Tacos. Once again the spices are the key so that you will not be tired of chicken. You will have gone from an American meal to a Mexican meal. If you want to take your food for lunch then how about some Chicken Salad. Just add some mayonnaise, red grapes, celery and bam you are sandwich ready.

In conclusion, cooking smart is always an added benefit. Chicken is delicious baked with whatever spices you decide on. Stuffed baked chicken can be stuffed with so many things from Kale to potatoes to jalapenos. Enjoy!
